Mai Tai recipe

Since my big announcement about moving back to Hawaii, I’ve been packing like a madwoman. My goal is 2 boxes a day, which might not sound like much, but you guys, I’m tired when I get home from work. All I want to do is have a glass of wine and watch some Gossip Girl on Netflix. Plus, I’m already getting sentimental about leaving. And packing doesn’t help.

With Hawaii on the mind, it shouldn’t be a surprise that I’m already thinking about what I’m going to eat when I arrive. In case I haven’t stressed this enough, there is suuuuch good food in Hawaii. And don’t get me started on the cocktails. Some Hawaii drinks are better left for your next tropical vacation; but not this one. The classic Mai Tai is great because it’s made with ingredients that are easy to find on the mainland. But, it really does taste like a beach party in your mouth.

So, here’s your homework: 1) make yourself a Mai Tai, and then 2) give me some packing pointers. I need some help. Stat.

Ingredients
1 oz spiced rum
2 tsp grenadine syrup
1 oz coconut rum
3 oz pineapple juice
2 oz orange juice
optional garnishes: maraschino cherries, orange slices
Instructions
Start by filling 2 cocktail glasses with ice, and divide grenadine between glasses. Add the coconut rum, pineapple juice and orange juice to a cocktail shaker. Add ice and shake. Strain and pour into the glasses. Top with spiced rum, poured slowly and carefully onto the side of the glass so that it sits on top of the mixture. Garnish and enjoy.
